Salad Toss

This salad is so delicious to enjoy for lunch. The family will devour this because of the mix from dressing and the chicken and the vegetables.

Whatever has grilled corn in the mix can never be bad. I have craving from time to time, and this is one of them. That and ice cream.

Ingredients:
6 stalks asparagus
2 cups eggplant cut into 1-inch cubes
1 cup red bell pepper cut into 1-inch pieces
2 artichoke hearts packed in water, drained, halved lengthwise
One 3-oz. raw boneless skinless chicken breast cutlet, pounded to 1/2-inch thickness
Dash each salt and black pepper
2 tbsp. frozen sweet corn kernels, thawed
2 tbsp. bagged sun-dried tomatoes (not packed in oil), chopped
3 cups chopped romaine lettuce
1 oz. (about 2 tbsp.) diced avocado
2 tbsp. low-fat or fat-free balsamic vinaigrette
1 tsp. Standard Process protein powder
1 tsp. Dijon mustard

Directions:
Preheat oven to 425 degrees. Spray a baking sheet with nonstick spray.

Lay asparagus, eggplant, bell pepper, and artichoke hearts on the baking sheet. Bake until softened, about 20 minutes.

Meanwhile, bring a grill pan (or skillet) sprayed with nonstick spray to medium-high heat. Season chicken with salt and black pepper and place in the pan; Cook for about 3 minutes per side, until cooked through.

Roughly chop asparagus and artichoke hearts. Transfer all cooked veggies to a medium bowl. Add corn and sun-dried tomatoes, and toss to mix.

Place lettuce in a large bowl (or on a large plate) and top with veggie mixture and avocado. Slice chicken and lay it on top.

In a small bowl, thoroughly whisk vinaigrette with mustard and SP powder. Pour mixture over salad or serve on the side. Enjoy!

MAKES 1 SERVING

Thai Coconut Curry Soup

This is the best spicy dish one could make if he or she wants a rich and delicious meal during a cold day.
I make this once a year, when I do, the family all seem to make it home. I usually serve this with rice and won ton spring rolls. Enjoy if this is your type of meal.

Ingredients
2-14 ounce cans premium coconut milk
1 heaping Tablespoon Thai curry paste
1 bunch cilantro roots, rinsed well
2 chicken breasts, thinly sliced
2 cups chicken broth
1 carrot, shredded
4 or 5 lime leaves
2 stalks lemon grass, halved lengthwise, woody leaves removed
2 tablespoons fish sauce
2 limes zest and juice
a small knob frozen ginger
a handful bean sprouts
8 ounce package rice noodles
1 bunch cilantro leaves, rinsed well
2 or 3 green onions, thinly sliced
¼ cup Standard Process protein powder
a sprinkle or two salt or soy sauce
Options, top with avocado and black sesame seeds
Directions
Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle.

Add the chicken and sauté until the chicken is cooked through, about 5 minutes.
Add the coconut juice from the first can and all the contents of the second can along with the chicken broth, carrot, lime leaves, lemon grass, fish sauce and lime zest and juice. Grate the frozen ginger into the broth with a Micro-plane grater or standard box grater, and add SP powder. Simmer for 20 minutes or so.

Stir in the bean sprouts. Add the rice noodles, gently pushing them beneath the surface of the broth. Turn off the heat and let stand until the noodles soften, about 5 minutes. Rice noodles don’t need to simmer like pasta to cook; they simply need to re-hydrate in the hot liquid.

Stir in most of the cilantro leaves. Remove the lemon grass stalks. Taste and season with a touch more salt (or soy sauce) as needed. Ladle into large bowls and garnish with the green onions and remaining cilantro leaves.

Garnish with avocado, cilantro and black sesame seeds

Italian Turkey Burgers

The addition of fennel seeds makes these burgers reminiscent of Italian sausage. Top them with fresh basil and tomato for a wonderful summer main course. Kids like these burgers without the extra spices, but if you can get them to try it, they may surprise you.

These are delicious burgers grilled on the Weber with direct or indirect heating. The buns are easy to toast on the grill with an indirect heat.

Ingredients
1 spray cooking spray
1 pound Turkey, ground, 93% lean/7% fat, raw
1/3 cup onion, chopped
2 tsp minced garlic
2 tsp fennel seed
1/2 tsp table salt
1/4 tsp black pepper, freshly ground
2 tsp Standard Process protein powder
4 sprays olive oil cooking spray
2 small tomatoes, ripe, yellow and/or red, thinly sliced
1 cup basil, fresh, leaves, torn or thinly shredded
4 whole reduced-calorie hamburger buns
American cheese, sliced onion, and green lettuce are optional

Instructions
Coat a grill or grill pan with cooking spray; preheat to medium-high.
In a large mixing bowl, combine turkey, onion, garlic, fennel seed, SP powder, salt and pepper; form into four 1/2-inch-thick patties. Coat burgers and inside of rolls with cooking spray.

Grill burgers for 5 minutes; flip burgers and add rolls to grill. Grill open-face rolls until lightly charred, about 1 to 2 minutes; remove to serving plates. Grill burgers until cooked through, about 5 minutes more.
To serve, top grilled rolls with burgers and tomato slices, onions, and cheese; garnish with basil.
Yields 1 burger per serving.

Notes
For extra flavor, rub the bread with a cut garlic clove as it comes off the grill.
Try these burgers with arugula leaves instead of the basil.

Baked Ziti

Here’s a tasty, healthy version of the Italian classic. For more robust flavor, add crushed fennel seeds. For a meaty version, add lean ground beef to the sauce. This is a family favorite that the kids will love. All portions of this recipe can be

3 sprays cooking spray
1 pound uncooked pasta, Rigatoni or Penne

4 cups marinara sauce, divided
1/2 pound shredded part-skim mozzarella cheese
1/4 cup basil, julienne cut for garnish
2 tsp Standard Process protein powder

Instructions
Preheat oven to 350*
Coat bottom and sides of lasagna pan with cooking spray
Cook pasta according to package directions
rinse with cool water and drain
While pasta is cooking, in a medium bowl, combine ricotta cheese, red pepper flakes, 3 tablespoons Parmesan cheese and 1/3 cup marinara sauce.

To assemble ziti, spoon 1/2 cup sauce on bottom of prepared pan; top with half of pasta in an even layer.
Evenly spread pasta with ricotta mixture; cover with half of remaining sauce.
Top with remaining pasta and spoon remaining sauce over top; sprinkle with mozzarella and remaining tablespoon Parmesan.
Bake until cheese melts and is browned, about 20 to 30 minutes.
Allow ziti to sit for 10 to 15 minutes before slicing into 12 pieces.

Steak Tacos

These tacos are a great source of protein and they are just nice to eat on a cactus tortilla. The green wrapper around those piping hot onions, peppers, and the juicy cubes of steak are delicious.
With the corn and tomato sprinkled on top, the freshness is mouthwatering. What sets the whole meal over the brink is the avocado salsa and the aromatics spices.
This dinner would be perfect if you have a nice drink to celebrate with great friends.

As any cook would have it, accompany these tacos with a plate of nachos, a bowl of re-fried beans or rice, and a platter of  potato skins.

Ingredients

4 to 8 Cactus Flour tortillas
1 pound cubed steak
1 small onion grated
1 to 3 cloves garlic grated
2 Tablespoons Olive Oil
1 T chili powder
2 teaspoon ground cumin
2 t ground coriander
2 scoops of SP powder
Salt and pepper to taste
1 cup tomato sauce
Option Minced jalapeno, chili peppers, or hot sauce for some heat
2 cups shredded lettuce
4 oz of Monterrey cheese, shredded
1 cup corn, cherry tomato, and avocado salsa

Directions

Prepare all of the vegetables and side dishes before grilling the steak
I use a Weber to grill or fry the cubed steak (one could used ground beef in a frying if desired), add all the mixing to a pan and cook until ready to eat. Top with vegetables and avocado salsa

Griddle the tortillas and serve with your favorite beer or margaritas

An entrée that's heart-healthy, quick and easy, and ready in 20 minutes using a few staple ingredients. Don't forget to have chopsticks ready for dinner and a cold Sapporo. But if one gets too hungry a shovel works nicely here.

Harvest Chicken Salad

This harvest chicken salad is delicious and will make anyone that is visiting envious for the recipe. I make this often when I have guests. This is a nice and refreshing sandwich served with pickled cucumbers or baby carrots. If you want to add some fats add cashews or walnuts, No Lays potato chips.

This is also a nice partner for soup, and if one decides to enjoy this salad in the winter, a nice soup sets this right in the world.

Yields 3-4 servings

Ingredients:
1 pound chicken breast (chopped, diced, or shredded)
1/2 cup diced red onion
1/2 cup diced apple
2/3 cup grapes, halved
1/3 cup Nature Box Dried Cranberries or Zingy Currants
1/4 cup sliced almonds
1/2 cup Greek yogurt
1 1/2 TBSP freshly squeezed lemon juice
1/2 tsp garlic powder
Kosher salt and freshly ground black pepper, to taste
Ciabatta bread, toasted

Directions:
In a large bowl, combine chicken, red onion, apple, grapes, cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.

Serve this chicken salad mixture on ciabatta bread to make sandwiches for lunch or as a snack.

Amazing Guacamole Recipe

This guacamole recipe is the best one I have made in years. I entered a recipe contest and made this with fresh chips. I had corn tortilla chips, fresh zucchini chips, and crispy plantain chips. This was a surprise because I had never made guacamole in this way before. This dip was best with the salty plantain chips and the bowl was emptied before the contest was over.

I will make this guacamole every time I have to bring something to a summer party. This was such a big hit, I think I am going to make some this weekend.

Ingredients
7 Hass avocados (medium) fresh, but not over ripe.
4 diced and seeded Roma tomatoes
1 cup finely diced red onion (Check for strength; be careful)
2 tablespoons freshly squeezed lime
1 tablespoon garlic salt
Dash pepper

Directions
Mash avocados in a bowl to desired texture and add red onion and seasonings to taste. Slice tomatoes and remove the seeds from the fruit. Cut into medium size squares. Fold in tomatoes. A little chunky is always good. This is better served after the flavors have a chance to absorb. A stone mortar, a hard and heavy bowl designed to hold substances, is the most effective way to mix your recipe.

Serve chilled.

Easy Margaritas

This easy to follow recipe was made one-day when 15 friends decided to show up unexpectedly. Every family should keep these ingredients on hand. Good margaritas are hard to find, and many times the person ordering this drink either likes the margarita or he or she dislikes the drink. The problems with bad margaritas are the mix, the tequila, or too many ingredients.

Some mixes are old, too bitter, and make the tequila bitter as well or some tequila is cheap and has a poor flavor. The problem with a majority of bad drinks is a
poor ratio of ingredients. This recipe takes the mess out of the mix and delivers a nice margarita on the rocks. The best way to ensure a nice margarita is to use quality ingredients. If the ingredients are old, that too will make a bad margarita and that is not what the bartender wants to happen. Whether the reader is a bartender or just someone that enjoys a delicious margarita; this recipe is as easy as 123.

Easy Margarita Ingredients

One tall glass of crushed or cubed ice
Two parts of quality tequila
Three parts of fresh margarita mix Margarita
salt or course sea salt (optional)

Easy Margarita Preparation

The bartender should take a tall (20 ounce) glass and fill it to the top with crushed or cubed ice. He or she should then pour two full shot glasses (4 ounces)of quality tequila over the ice. The bartender should then pour three full shot glasses (6 ounces) of margarita mix into the tequila and ice. With a stir stick, the bartender should swizzle the drink until he or she believes the drink is mixed.

As an option the bartender can dip the glass rim into the margarita mix before the first step of filling the glass with ice and dip the damp rim into the salt. After applying the salt, the bartender can then start
the one, two, and three process of making a very delicious margarita on the rocks.

Easy Margarita Variations

Margarita mix is available in multiple flavors. The flavored mixes are strawberry, peach, mango, raspberry, and finally melon that are available at the local market or liquor store.
Sometimes the bartender should mix the flavors to make various combinations of a margarita. An equal part of strawberry and mango margarita is delicious and strawberry-peach is very refreshing. As long as the bartender follows the 123 rule on making easy margaritas, he or she can never go wrong.

Once the margaritas are made and distributed to the entire guests, the bartender can take bows and shake hands for this truly is a delicious and easy margarita.

He or she can modify this recipe by making a pitcher of margaritas the same way. The best method is to use a tall pitcher full of ice and make four servings
worth of margarita mix and tequila. This recipe may vary depending on the pitcher so the bartender may need to add another serving and then another and
maybe just one more.

Avocado Salad with Tomatoes

AVOCADO SALAD WITH TOMATOES, LIME, AND TOASTED CUMIN VINAIGRETTE

This  Salad and Toasted Cumin Vinaigrette is one of my favorites. THe salad is perfect with sweet red onions as long as they are mild and not bitter. I love this salad during the summer and the arugula is slightly peppery but not too strong.

Ingredients
  •  4 large ripe tomatoes, cut into 1-inch chunks, or 20 cherry tomatoes, halved
  •  2 ripe large Hass avocados, halved, pitted, peeled, and cut into 1-inch chunks
  •  1 large red onion, thinly sliced

  •  1 cup arugula leaves
  •  1 teaspoon ground cumin

Vinaigrette:
  • 1/4 cup fresh lime juice
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon honey
  • 1 tablespoon cumin seeds, lightly toasted
  • 1/4 cup chopped fresh cilantro leaves

  • 1/4 cup canola oil

Do not use a blender to make this vinaigrette.

Eggplant Hummus

Eggplant Hummus is a fabulous snack to prepare when having guests over to entertain. When having friends visit, prepare something that will make friends take notice of your culinary prowess. This treat goes well with crackers, pita chips, or fresh vegetable chips.
One hint I cannot leave out, is to cut back on the garlic to a desired taste. Sometimes the garlic will overpower the flavor and make your dip bitter as it marries in the fridge.
Ingredients
  • 1 (1 1/2-pound) eggplant or 3 Japanese eggplants, trimmed and cut into 2-inch pieces
  • Olive oil, for drizzling, plus 1/3 cup
  • Kosher salt, for seasoning, plus 1/2 teaspoon
  • Freshly ground black pepper, for seasoning, plus 1/4 teaspoon
  • 1 (15-ounce) can cannelloni beans, drained and rinsed
  • 1/3 cup loosely packed fresh flat-leaf parsley
  • 3 tablespoons fresh lemon juice (from about 1 lemon)
  • 1 clove garlic
  • 1 hothouse cucumber, cut into 1/4-inch thick slices
Directions
Preheat the oven to 450° and place an oven rack in the middle.
Place the eggplant on a parchment paper-lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 20 to 25 minutes until golden brown.
Set aside to cool.

In the bowl of a food processor, combine the cooled eggplant, beans, parsley, lemon juice, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Pulse until the mixture is coarsely chopped. With the machine running, gradually add 1/3 cup of olive oil until the mixture is creamy. Season with salt and pepper, to taste

Place the hummus in a dipping bowl and serve with the cucumber slices. Alternatively, spoon the hummus over the cucumber slices and arrange on a serving platter.

Huckleberry Sauce

This huckleberry sauce is one of the very best I have tasted, and it was so easy to make for my family. Huckleberry sauce is the sweetest topping for a bowl of vanilla ice cream or as a drizzle on a banana split. Try spiraling a line in a sundae glass and then add ice cream, whipped cream and more sauce over the top with a cookie. This sauce makes the most delicious decoration and it will make every child want more.

This sauce can become a jam if you cook it too long. Make sure to stir constantly until the sauce or jam has a desired consistency. Either way a family will love having this sauce on their dessert. Here is the recipe for delicious huckleberry sauce:
Ingredients
·                     2 cups huckleberries
·                     1/3 cup granulated sugar
·                     2 tablespoons lemon juice
·                     2 tablespoons cornstarch
·                     1 1/2 teaspoons water
Directions
In a saucepan over medium heat, add huckleberries, granulated sugar and lemon juice. Bring to a boil reduce heat and simmer for 5 to 8 minutes.
In a small bowl, combine the cornstarch and water. Slowly stir into the huckleberry sauce and heat until thoroughly combined and thickened.

Serve over vanilla ice cream, or as a garnish for a savory steak or fillet.

Party Drinks

Settling on drinks is always the first step when deciding to throw a party for friends. Snicketie’s or snacks are easy to accomplish. Many people have food favorites that he or she was raised on at home or from attending many events. Obtaining recipes from others at various times of the year happens regularly. Drinks are another story and libations are very difficult to accomplish if the server is a novice. This is a good reason to decide on drinks first.  Many friends have an individual drink that he or she enjoys, and as a host one should provide a selection of drinks for friends to choose from.  A structured drink menu sitting by the bar can make the evening fun. The following drinks are staples at any party and can be enjoyed by all.

The Ruby Martini
2 oz Vodka; Absolute, Belvedere, or Grey Goose are the best
1 oz fresh or bottled Pomegranate Juice
½ oz Orange juice or Margarita Mix in the bottle

Pour the ingredients over a ¾ full shaker of ice
Cover and shake until frothy inside and frosty on the outside.
Pour into a chilled martini glass and garnish with a slice of orange, lemon, or stemmed cherry.
This drink is a brilliant red and the flavor is just as sparkling as the name.

The Magic Mojito
10 clean mint leaves              3 oz soda water                       Metal Spoon/silverware
1 lime, juiced                          1 sugar cube
½ Lemon, juiced                     1 ½ oz Absente or Absinthe Liqueur

Muddle together mint, lime, and lemon in a large shaker half way filled with crushed Ice
Add 3 oz of soda water and set aside
In a 12 oz glass goblet fill half way with ice and balance spoon over rim of goblet
Place sugar cube in the center and slowly pour absente over cube. Carefully light sugar cube with a lighter or use long matches for safety purposes.
Pour muddled juice over the spoon and drop the cube into the glass, stir and enjoy
With safety, watch the magic with this drink.

Caribbean Christmas

Crushed ice                       2 oz Pineapple Juice                  Assorted fruits for Garnish
1 oz Chambord                  1 oz Midori
1 spoon                              2 oz Cranberry Juice

Fill half of a tall glass with crushed ice
Pour the Chambord into a tall glass
Place the spoon with concave side up against the side of the glass right above the ice
The spoon is used to slow the ingredients as you slowly pour to create a layered appearance in the glass. Pour each ingredient over the spoon slowly as listed.
Garnish with assorted fruit and enjoy the sunset.
This is a beautiful drink that is just as amazing to look at as it is to drink. It is very important to pour all the ingredients in order as listed in the recipe, (Pineapple Juice, Midori, and Cranberry Juice).

The White Nutcracker
4 oz Kahlua
2 oz Vanilla vodka, Absolute
Add milk or cream to fill your glass

Mix or shake, and then pour over ice in a glass tumbler
Try this recipe with vanilla or raspberry vodka
Make a Skinny Nutcracker with skim, rice or soy milk.
Both flavors are delicious, be careful, they can sneak up on you.

The Rat King
I can red bull
4 oz Kahlua
2 ½ oz tequila
Mix or shake, and then pour over ice in a glass tumbler
This is also delicious but very strong

Hot buttered Rum Drink
1 tablespoon soft butter
1 tsp brown sugar
¼ tsp Vanilla extract
Spices to taste: ground cinnamon, ground nutmeg, allspice
2 oz dark rum
Hot water
Whipped cream (optional)

Place the butter, sugar, and spices at the bottom of a tall mug (Irish coffee glass)
Mix well or muddle until a paste is formed.
Pour in the rum
Fill with hot water to the top of the glass
Stir gently, and then top with whipped cream if desired

A host can never go wrong with a variety of mixed drinks, but not every guest enjoys a mixed cocktail. There is a select few that would prefer just a beer. If this is the case, make sure to have a nice selection for those that are not as adventurous but still deserve a quality beverage.  A nice selection of Seasonal Samuel Adams, Indian Pale Ales (IPA’s), or local micro brews can make a festive offering.

Last, don’t forget the designated drivers or non-drinkers that will put up with the other guests. The host should have bottled water, clear soda pop, ginger ale, cranberry juice, orange juice, coffee, Blue Gatorade, or any other ingredient that the host can pour and garnish. This is a great way to make all guests feel like he or she is participating without the peer pressure.

Happy Holidays
