Harvest Chicken Salad

This harvest chicken salad is delicious and will make anyone that is visiting envious for the recipe. I make this often when I have guests. This is a nice and refreshing sandwich served with pickled cucumbers or baby carrots. If you want to add some fats add cashews or walnuts, No Lays potato chips.

This is also a nice partner for soup, and if one decides to enjoy this salad in the winter, a nice soup sets this right in the world.

Yields 3-4 servings

Ingredients:
1 pound chicken breast (chopped, diced, or shredded)
1/2 cup diced red onion
1/2 cup diced apple
2/3 cup grapes, halved
1/3 cup Nature Box Dried Cranberries or Zingy Currants
1/4 cup sliced almonds
1/2 cup Greek yogurt
1 1/2 TBSP freshly squeezed lemon juice
1/2 tsp garlic powder
Kosher salt and freshly ground black pepper, to taste
Ciabatta bread, toasted

Directions:
In a large bowl, combine chicken, red onion, apple, grapes, cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.

Serve this chicken salad mixture on ciabatta bread to make sandwiches for lunch or as a snack.
