Vegitarian Fiesta Tacos

These tacos are a fun variation from the average take of a healthy meal during a diet. My family will have these tacos whenever we need an entree for a meal replacement when beginning a new food schedule. The nice benefits from this meal is that one obtains that taco fix without the problem of cheating on his or her schedule.

I like to introduce this into our list of dinners because soup isn't the only alternative when one tries to begin a healthy regiment.

Ingredients

2 Cauliflowers, washed and separated
1 small onion, diced
1 or 2 Avocados, sliced
1 Bell Pepper, orange or yellow diced
1 head of iceberg lettuce or butter leaf
1 jar of Picante or salsa
1 pouch of taco seasoning, any flavor desired
1 bottle of Tabasco or desired hot sauce
1 Bunch cilantro or Parsley
1 Lime or Lemon
1 can cooking spray
1 jalapeno, sliced (optional)

Directions

Prepare the lettuce into shells (double up for bulk or for stability) one or two leafs.
Slice the avocado and drizzle citrus over the top to keep fresh
Place salsa into a cup or have the bottle hot sauce at the table
Place the diced peppers in a bowl
Julienne cilantro of parsley, set aside

Steam the cauliflower, set aside on colander to drain any water off.
Warm a frying pan over medium heat, coat with cooking spray and add onions.
Saute onions, place the chunks of cauliflower in frying pan. Chop cauliflower until pea sized and then add taco seasoning.
Cook until hot and covered thoroughly with seasoning, do not overcook.

Take a scoop of cauliflower and place in leaf shell, lay avocado across the top, and sprinkle with peppers and cilantro or parsley.

Add Jalapeno as an option to create more heat.

Place two tacos on the table and add desired salsa or hot sauce, enjoy
